What is ceremonial cacao?

Ceremonial cacao is prepared from freshly harvested beans of Criollo variety which is rarer than other varieties of cacao. It has the most ceremonial qualities and a very distinctive taste. The beans are first fermented and dried, but not roasted, and then turned into cacao nibs. The nibs are ground into a thick paste which is molded and cooled into solid blocks.

The cacao paste

In the traditional process of grinding cacao beans, a large volcanic rock known as 'metate' is used along with a smaller rock resembling a rolling pin called a 'mano'.

Grinding other ingredients, like corn and chilies, is often done using the same 'metate'.

The ceremony

The consumption of ceremonial cacao belongs to an ancient culture and traditions. It has been used by the people of Mesoamerica as a tool to communicate with their spirits in rituals and shamanic practices.
