What is brewed cacao?

Brewed cacao is prepared using roasted, ground cacao beans which are the dried and fermented seeds of the cacao plant. 

The raw beans contained within the white, sticky flesh of the cacao pod do not taste much like chocolate and, once harvested, the beans go through several processing steps during which they start to develop the distinct chocolate flavor and aroma. The preparation of brewed cacao, unlike making cacao powder, keeps the cacao butter intact, maximizing the drink's nutrient content.

 

The cacao tree

The cacao tree (Theobroma cacao - from Greek 'food of the gods') is a small evergreen tree which grows well as an understory plant in humid forest ecosystems, typically 20 degrees North and South of the Equator.

It is a symbol of birth and death, and represents the lifecycle. It also symbols abundance and used to be considered a currency. Every part of the plant has medicinal properties.

The flower

The cacao tree flower stays open only for a few hours. it is pollinated by a small male mosquito or a nocturnal midge that feed on sugar.

In ceremonies, the cacao flower is used as a body wash and it is believed to help with stress and too much responsibility.

The pod

A cacao pod contains about 40 beans covered in a white flesh. The flesh has a very high sugar content and is typically used to help fermentation.

Traditionally, the fermentation process was done by women and it was considered inappropriate for men to do it.

The cacao bean

The flavor of the cacao beans is enhanced through the roasting process, which also serves to eliminate bacteria, decrease moisture, and loosen the outer shell.

Traditional techniques include roasting on a metal plate over a fire and then removing the shell by hand. Shells are often used to fertilize crops.
